HEALTH! ! ! What a big, big, subject.
Health care is the largest and the fastest growing industry
in our economy. Good health is the one thing that is desired
by every single person. It is our fear of not having it or
losing it that fuels the health industry. Our interest in
health is not a bad thing, but your understanding of it is
more important. Research in it's purest form is an attempt
to discover an unknown and the minute it becomes a tool to
prove what the researcher, or their sponsors, think it becomes
flawed. In my opinion, as a trained researcher, I think that
the majority of our present health research is flawed. I
do not mean that the majority of health research is incorrect,
but that we do not know if it is or not . We do know that
there is continual reporting of opposite research results.
There is too much information reported suggesting what we
should and should not eat. That information is often flawed.
The reporters of these opinions often only tell us what they
want us to hear. For example, you never hear anyone report
that we should not eat broccoli. However, broccoli is a
major contributer to blood clotting which causes many deaths
annually. Another example is you continually hear that we
should not eat fat yet fat is an essential component for
our brain development.
Now we should review the things that we do
know. We do know exactly where we have been but can only
project or guess where we are going. I think what we know
about where we've been should be an indicater for where we
must go. One of the first things I remember from my early
days is that there were almost no obese people but there
was abundant food. Our diet was meat, potatoes, bread, cheese
and beans. There was no refrigeration thus no fruit or vegetables.
I remember later it was reported that fat was unhealthy so
we got margarine, lean meat and still got more obese. Then
we got diet food, non fat everything, nutrition programs
and still more obese. Next was the news that we should eat
nothing but carbohydrates, then came no carbohydrates and
we are becoming more obese. This is history and it proves
that we don't know what we are doing.
Actually we should enjoy the food that we
like in moderation. Beef is the most preferred food and it
has taken the hardest hit from the flawed science. Our goal
as representatives of the Wagyu family is to make sure that
growers and consumers both understand that beef is healthy
and that monounsaturated and omega 3 fats are essential for
our health. It is widely known that Wagyu beef is the most
tender and best tasting. But just as important is the fact
that Wagyu beef contains a much higher percentage of the
healthy fats (lipids) than any other breed of cattle. The
bottom line is that we produce the most healthy and best
tasting beef that will ever be available.
